One of the best things about living in Florida, is the access to Fresh from Florida produce and other products (including seafood and meat). Every season we are blessed with an abundance of amazing fruits and vegetables that make meal prep at home so easy! Each of these family favorite recipes require minimal ingredients to make a full meal while utilizing all the items my family enjoys eating! Prep time is honestly less than five minutes for each with the longest cook time being the juicy mouth watering corn on the cob recipe I snagged from the Fresh from Florida recipe page on their site!
The most important meal of the day, yet people tend to skip it because they think their options are limited. Grab a yogurt, maybe a piece of fruit. Why not get the best of both worlds with a hot breakfast too? If you can’t make pancakes or waffles from scratch, I am sure you can agree that drowning them in butter and syrup is not the best way to go about keeping to a fairly healthy diet. My favorite way to eat pancakes or waffles is with fresh berries and a drizzle of vanilla yogurt!
How easy is it? Slice your blueberries and strawberries, sprinkle or cover (your preference) then use a small syringe (I keep mine from my son’s liquid medications) and it may be a tiny bit messy but use a spoon to fill the syringe and then quickly glide your hands across your waffle or pancake while pressing the syringe down to get a pretty presentation as well!
Next you need;
So easy and NO cooking! I sometimes serve this Fresh from Florida inspired produce salad as a side dish to dinner as well!
This serves one person, so you can easily adjust to make more servings.
1/4 cup chopped of each; green peppers, red peppers, yellow peppers, onions, and tomatoes.
1/4 cup sliced (julienne) cucumbers
1/4 cup Gorgonzola cheese
1 tbsp organic balsamic vinaigrette dressing
Mix all ingredients in a bowl and then place in nice serving dish or alongside your favorite main course.
Optional: A little extra Gorgonzola cheese to sprinkle on top
I created a cucumber and Greek yogurt feta tea sandwich for my lunch. The dip spread is normally found in the produce section near the dressings. Serve on whole wheat or pumpernickel bread preferably for taste and consistency. You can also toast the bread briefly if you don’t want it so dainty.

I turned the grill up high and got ready to convince my husband to try a new corn on the cob recipe that I got over at Fresh From Florida’s website.
