Three Cheese Keto Cauliflower Casserole
This Three Cheese Keto Cauliflower Casserole is a dream come true for my keto diet. When I was younger, there was a game called POGS. My friend and I both thought our most coveted POG was one that said, “I love potatoes and POGS!” This is because we both were obsessed with potatoes. In any form. I still am. Yet, on the keto way of eating, we all know potatoes are a big no no. I decided to take my scathing dislike of cauliflower in raw or regular steamed form and turn it in to something I would love. I now present to you my family’s new favorite dinner side kick; Three Cheese Keto Cauliflower Casserole.
Other than the ingredients, what you will need to prep the Three Cheese Keto Cauliflower Casserole:
Large pot to steam your cauliflower, or you can use an Instant Pot.
Electric Mixer. I can’t live without my KitchenAid mixer.
Round glass baking dish is preferred.
Knives, spoons, measuring tools, and a serving spoon.
While your ingredient list is below, I do have a few recommendations when it comes to preference for taste on this Three Cheese Keto Cauliflower Casserole recipe. I do use precooked bacon to keep prep time down. I also use pre minced garlic in oil and typically buy this at Aldi. You can use heavy cream in place of the organic almond milk but I keep almond milk on hand at all times.
If you are going to save this recipe for later, I suggest ordering your Not Just Bagel Seasoning or something similar before planning to add this to your meal plan.
The biggest game player in this dish is the Chihuahua cheese. I can only find my favorite brand at Super Walmart stores (Not even smaller stores have it in town). The brand I use is Supremo Queso Chihuahua. You can use their store locator if you wish to find near you. As well, using a brick of mild cheese is preferred over pre shredded when doing keto. Pre shredded cheese has potato starch to bind it together.
I also highly prefer the Walmart Great Value cauliflower. I just bought twelve bags this week because a cashier told me they are hard to keep in stock! I tried another brand and it did not steam as nicely and changed the texture to not as smooth. You would think all vegetables are the same, apparently not.
The best part about this recipe is not only that it looks beautiful (before you take it all apart serving) but it gives a creamy texture just like mashed potatoes with a tasty crisp cheese topping! Also a crazy fact about this Three Cheese Keto Cauliflower Casserole, due to the seasoning used, there is absolutely no need for other seasonings such as salt and pepper! Even my Uncle who seems to use an over abundance of salt, eats it without adding to it. I am obsessed with eating this as leftovers too…if there is any left behind after dinner!

Prior to starting to prep the recipe, preheat your oven to 350 Fahrenheit.
Three Cheese Keto Cauliflower Casserole
- 24-36 oz of steamed cauliflower
- 8 oz cream cheese
- 8 oz fresh shredded Mild cheese divided in half
- 6 oz Chihuahua Queso cheese
- 6 slices of bacon precooked is fine
- 4 oz Organic Almond Milk Can replace with heavy cream
- 3 tbsp Not Just Bagel Seasoning
- 2 tbsp minced garlic
- 1/4 cup chopped scallions divided in half
- Olive oil spray
- Preheat oven to 350
- Heavily steam cauliflower until super soft and place in mixer
- Add the cream cheese, half of the mild cheese, and all of the Chihuahua cheese.
- Mix until smooth
- Chop bacon and add to mix
- Add the almond milk, minced garlic, Not Just Bagel seasoning, and half of the scallions.
- Mix until completely smooth.
- Spray your glass baking dish with olive oil spray
- Spoon mixture into the casserole dish and smooth out the top
- Place the other half of the Mild cheese on the top in a flat layer
- Bake at 350 for 30 minutes
- Once that baking time is complete do a 5 minute low broil so cheese will brown a crisp a little
- Top with other half of scallions
- Let sit for 5 minutes before serving
